About this deal

Counting the most recent release, BOSH! On A Budget, Henry and Ian have produced six cookbooks brimming with recipes. There is an array of meals here. Breakfast and brunch, light meals, entertaining, comfort foods and desserts are all included. The ingredients are familiar and readily available and, for the most part, cheap. I dare say that even those cooking in a non-vegan household will enjoy these dishes, even if they take the liberty of replacing the specified dairy-free butter with the one they already have in the fridge. We’ve written a fair few bolognese recipes over the years, but this one, made with celeriac and lentils, is one of our best. Be warned though, it makes a BIG batch! One portion of this will happily feed 16 people, but it freezes like a dream, which means you’ll have something delicious to eat even if you don’t fancy cooking from scratch! Timings

Tip the lentils into a bowl, cover with cold water and set aside to soak. Trim and roughly chop the onion, celeriac, leek, celery and mushrooms and peel the garlic. Ian: Gorge on plant-based recipe videos on the internet - a couple of hours of those will make you realise you never have to miss out on a plant-based diet! Henry: Watch a few documentaries on veganism like Cowspiracy. The information in those films will definitely legitimise and reinforce your decision to go plant-based. Add the onion and celeriac to the processor with half the mushrooms. Pulse until you have rough dice, then tip into a bowl. Add the onion, leek, celery, garlic and parsley to the processor with the rest of the mushrooms. Pulse to chop, then add to the bowl with the onion and celeriac.
